Kielbasa Bites

So today I decided to make a go-to in my recipe collection. I had yet to make it for my boyfriend and his daughter so today was a test of how simple and quick this recipe can be when I have some hungry mouths waiting for food. These kielbasa bites are an easy meal for those busy week nights when cooking isn't really the first thing on your mind after a long day at work. But when is it ever, right?  



You can use this concept to create a multitude of variations, but this one is as simple and delicious as it gets.

This recipe will feed a family of four easily, my family of 3 had plenty of leftovers for lunch tomorrow, yum!

 First, chop up and saute one package of Kielbasa. I used the store brand this time, but any brand will do just fine. Cook it until it's warm and a little crisp, don't overcook! It will continue heating up in the oven. 

Next, lay out either crescent rolls or biscuits on a cookie sheet or two depending on how many you are making. This time around I had only one package of crescent rolls and two packs of biscuits, so biscuits it was! If using crescent rolls, unroll and lay out like normal. If using biscuits like I did, lay them out and one by one, pick them up and press the sides to spread them out so you can stuff them. If you don't do this step it'll be much harder to roll up later.


Once the roll of choice are laid out and the kielbasa is cooked, it's time to fill them up! I had some leftover cheese sticks that we were getting sick of eating as a snack, so I chopped them up and added them to the mix as well. Be careful to not overfill your rolls or you  could have a busted roll when they start cooking up. 


Now you can pop them in the oven and bake at 350 for 10-15 minutes. These kielbasa bites are sure to be a hit any time of the year for the young and old!

I also make a deliciously spicy dipping sauce that is simple to make out of ingredients you likely already have! I've never actually "measured out" the ingredients for the dipping sauce, so just go by quantities. For example, this time I did about 1 cup Dijon mustard, 1/2 cup honey, 1/4 hot sauce, and 1/4 cup brown sugar. But feel free to adjust these measurements to your own palates! We like things a little spicier in our house, so I wasn't shy on the hot sauce. ;-)



Ingredients for Kielbasa Bites
1 package of Kielbasa, any brand

2 cans of refrigerated biscuits, or crescent rolls
1/2 block of cheddar cheese, or 4 cheddar cheese sticks 

Instructions
1. Cut up kielbasa and fry it up in a sauce pan, no butter or oil needed unless your pan isn't nonstick. Heat up the kielbasa just enough to warm it through and create a little crisp on the bottoms, it will finish heating up in the oven.

2. Unpackage and unroll the biscuits or crescent rolls onto a baking sheet. The biscuits will need to be pressed out a little in order to be easier to fold over once filled.

3. Cut up the cheese and place a few pieces on each roll. Then scoop a small spoonful of kielbasa onto each roll.

4. Now its time to roll up the crescent rolls or fold up the biscuits. Make sure you keep the ends of the crescent rolls tucked in as much as possible so nothing falls out. The biscuits will need a little tough love to spread out and be tucked under themselves. Make sure to put the "seam" side of the biscuits down against the baking sheet so they don't burst open.

5. Pop them in the oven at 350 degress for 15 minutes, rotating the pans halfway through to ensure even cooking. 

6. Enjoy!!! *If little ones are enjoying, be sure to let them cool about 5 minutes so they don't burn their hands.

Ingredients for Dipping Sauce
I usually just wing it with the measurements...so make it to your own taste! :-)
1 cup Dijon mustard
1/2 cup honey
1/4 brown sugar (doesn't matter if it's light or dark sugar)
 1/4 cup Franks Red Hot Sauce - I wouldn't recommend any other hot sauce, this one has other flavors than just heat to add to the overall flavor

Instructions
1. Mix all ingredients together, adjust measurements to taste 

2. Refrigerate until needed, or at least 10 minutes to let ingredients mix together

3. Enjoy with any of your favorite dipable foods!

My First Blog: Lets get to know one another!

Welcome! 


My name is Kimberly, but you can call me Kim. I grew up in a small town on the outskirts of Massachusetts bordering Rhode Island. I am in my early 20's and work at my first and only job I've ever had as an Orthodontic Assistant. I absolutely love what I do and who I work with. Work is a huge part of my life, but only a small part of who I am. I am an amateur chef, baker, DIY crafter, traveler, sister, daughter, girlfriend, and so many other titles I'm lucky to call my own.

Through the encouragement of my mother and boyfriend, I have decided to start writing a blog. I love getting to know new people and figured this would be a good way to do that! Can't wait to see and hear what you all have to share!


My posts will focus on recipes I try (thanks Pinterest!), DIY crafts (thanks again Pinterest!!), my daily extravaganzas, and a little bit of everything in between. If anyone has any suggestions on posts you think I should do, feel free to send them my way! I'm always open to suggestions... ;) 


When it comes to cooking and baking, I tend to screw up recipes like a pro. I'm not quite sure how I manage it, but 99% of the time I either leave an ingredient out, or add too much of one...Its a talent, really! Truly can't wait to tell you all about my holiday stories. I promise to only post about recipes that went over well with the mouths I'm feeding, maybe! Where's the fun in just reading about the yummy stuff?!



I also love trying out all those Pinterest DYI's that you read about. From nail styles to candle teacups, I'm willing to try it all! Sometimes I get lucky and they turn out awesome! Again...not always, but wheres the fun in things always turning out like you wanted them to anyways, right? Silly Pinterest wouldn't let me add one more letter...so yes I realize it actually says "oment"....but you all get the point, haha.


One of my passions, like everyone else, is talking about my home life and daily experiences. I love talking about the new places I go and things I try.
